I’m replacing the joists in my barn, 18×28, one by one by ripping out the joist that nails to the stud and sits on the horizontal stick notched into the stud. How do I attach a wood i beam to the stud? scab into the osb? or into the solid wood runners?

The support for the I-joist has to be underneath it. You can't support tham by nailing them to something.
If you have any doubts about it, talk to the folks at the place you're going to buy the I-joists from. They'll know whom to contact to get some engineering support from the manufacturer.
If you get them by the balls, their hearts and minds will follow.
