I will be texturing sheet rock for the first time. Have gun to blow on orange peel. I see knock-down orange peel that looks like wet blobs. And I also see the effect that I like with the material having nice crisp (sharp) edges. What do i need to do to get those sharp edges?

By "sharp edges" you mean
By "sharp edges" you mean like coarse sand? You need the right grit for that.
Could you be thinking of a "stomp"?
What you might be refering to by sharp edges to the texture is what is called (around here) as a stomp texture.
Depending on how deep a texture desired, a slightly thinned down topping compund would be either rolled or troweled on then a long, floppy headed brush would be slapped and pulled to create the texture.
The less the topping is thinned and the thicker it is troweled on, the deeper the texture.
Practice on some scrap to come up with your texture.

on occasion I've matched using some crupled up 4 mil visqueen, stapled to a pc of ply with a handle. Dob on using slightly thinned mud. Then knock down.

By sharp edges I assume you mean texture that doesn't look wet. With orange peel finish the trick is thorough mixing. You have to have zero lumps. The texture then depends on the wetness of the mix, the spray pressure and the size of the orifice. With a knock down you have these three variables plus the time it's left to dry before knocking down. Then you can sand lightly. I suggest you play with your sprayer on scraps before attempting walls. Your texture will dry much quicker where it covers finished areas than on bare rock.
As for myself, I've gone almost entirely with hand textures these days.
