i would like to cut openings in a couple of existing 8″ log walls but am not looking forward to possibly hitting undetectable spikes holding the logs together with the chain saw. Anyone out there with ideas? Would a metal detector work to locate the spikes?

If you have metal detector, give it a try. I have the Bosch detector which locates metal inches deep with no problem. The wand-type detector I have is good for less than an inch deep only.
A big rare earth magnet might find them.
Go to a survey supply company and rent a Shonstadt detector. Should run about $20 a day. It'll find a transit tack under 1' of asphalt...
The ideal thing would be one of those wands they sell to people who are planing recycled lumber. Short of that the right metal detector would work, but you should try it on some spots where you know there are spikes to be sure it's adjusted properly.
